halloween themed cupcakes

I love baking and when my friends and I came up to do a 'bake off' I couldn't be more excited; basically every Friday someone else bakes something and brings it to uni - it keeps us motivated!

Since my bake off week was so close to uni, I decided to make Halloween themed cupcakes because who doesn't like Halloween, black icing and little pumpkin and ghost decorations?!

To make my cupcakes I used a Mary Berry recipe which can be found here or you can follow my instructions as I changed it up a little.

For the cupcake

  • 175g butter (melted)

  • 175g self-raising flour

  • 175g caster sugar

  • ½ tsp baking powder

  • 3 large eggs

  • ½ tsp vanilla sugar

For the icing

  • 175g butter, cut into large pieces

  • ½ tsp vanilla extract

  • 3 tbsp milk

  • 350g icing sugar

  • edible food colouring of your choice - I went with black

  • Add sugar, eggs and the vanilla sugar and mix.

  • Gradually add flour, baking powder and butter and mix until smooth.

  • Preheat the oven to 180C/gas mark 4

  • Line a 12-hole muffin tin with paper cupcake cases and spread the mixture evenly.

  • Bake for 20-25 minutes, or until the cakes are well risen and firm on top .

  • For the icing, add all ingredients into a bowl and beat until smooth.

  • Add food colouring to the icing and mix until the colour is spread throughout.

  • Once the cupcakes have cooled down, pipe swirls of the icing on top of each cupcake.

  • Scatter with edible glitter and any decorations you have.
