I love baking and when my friends and I came up to do a 'bake off' I couldn't be more excited; basically every Friday someone else bakes something and brings it to uni - it keeps us motivated!
Since my bake off week was so close to uni, I decided to make Halloween themed cupcakes because who doesn't like Halloween, black icing and little pumpkin and ghost decorations?!
To make my cupcakes I used a Mary Berry recipe which can be found here or you can follow my instructions as I changed it up a little.
For the cupcake
175g butter (melted)
175g self-raising flour
175g caster sugar
½ tsp baking powder
3 large eggs
½ tsp vanilla sugar
For the icing
175g butter, cut into large pieces
½ tsp vanilla extract
3 tbsp milk
350g icing sugar
edible food colouring of your choice - I went with black
Add sugar, eggs and the vanilla sugar and mix.
Gradually add flour, baking powder and butter and mix until smooth.
Preheat the oven to 180C/gas mark 4
Line a 12-hole muffin tin with paper cupcake cases and spread the mixture evenly.
Bake for 20-25 minutes, or until the cakes are well risen and firm on top .
For the icing, add all ingredients into a bowl and beat until smooth.
Add food colouring to the icing and mix until the colour is spread throughout.
Once the cupcakes have cooled down, pipe swirls of the icing on top of each cupcake.
Scatter with edible glitter and any decorations you have.
